Macerated Peaches at the Co-op Booth on August 12

Sonia’s “Drunken” Peaches recipe
Preparation Time: 20 minutes
Maceration Time: Overnight
Yields: Approximately 6 to 8 servings
2 pounds of peaches
4 table spoons of sugar
4 table spoons of lemon juice
1 cup of Tawny Port
A pinch of salt
Into a tupperware or zipper storage bag, cut the unpeeled peaches in eighths. Sprinkle with the sugar, add the lemon juice, port wine and salt. Snap on lid or zipper up bag, and gently toss to coat all ingredients. Chill overnight. Suggestion: Serve at room temperature over vanilla ice cream, top with a dollop of whipped cream and dusting of cinnamon.
